Veggie Loaded Fried Rice

Ingredients
Olive Oil, 2 tbspGarlic, 1 minced cloveBrown Rice, 4 cups, precookedCelery, raw, 1 cup, choppedCarrots, raw, 1 cup, choppedBroccoli, fresh, 1 cup, choppedOnions, raw, .25 cup, choppedHam, regular (11% fat), .5 cup, diced very smallEgg, 4 large
Directions
Heat oil in large skillet. Add minced garlic glove and all veggies. Cook about 5 minutes, until tender crisp. Add diced ham and rice, cook until all is heated through. Add eggs and finish cooking, stirring frequently.

This is really yummy served with a bit of spicy Thai chili sauce.
