Low-Fat Scalloped Potatoes

Ingredients
4 potatoes (1 lb. 10 oz.)1 large onion1/2 tbsp. butter2 tbsp flour1 1/2 c. 1% milk1.5 oz sharp cheddar cheese, finely shredded
Directions
Melt butter, add flour. Blend well. Add milk slowly, stirring continuously to avoid lumps. Cook in microwave until thickened, stirring occasionally.

Spray casserole dish with PAM. Layer 1/2 potatoes and 1/2 onion in bottom of dish. Pour over 1/2 of Bechamel sauce. Then repeat layers with remaining potatoes, onions and sauce.

Sprinkle cheese over top.

Bake 1 hour at 400F. Makes 4 large servings.
