Italian Fish Stew

Ingredients
1 T. Olive Oil1 Fennel Bulb, chopped1 large onion, chopped15 cloves of garlic, minced1 small Zucchini, halved and sliced1 28oz can diced tomatoes, Italian Style1/2 cup red wine2 cups chicken broth1 T. oregano
Directions
Heat olive oil in large stock pot. Add onion, fennel, garlic, and zucchini and saute until soft. About 10 minutes. Add oregano. Add tomatoes, wine, and chicken stock. Simmer for 20 minutes until all veg are soft. Turn heat off and lay all of the fish on top of the soup, cover the pot and let the fish go until you are ready to eat, at least 10 minutes. If the fish isn't cooked through, "flaking", turn heat on again for a few minutes. Do not overcook fish.
