Easy Crispy Beef Enchiladas

2 cans kidney beans1 pound ground beef1 can enchilada sauceshredded cheese8-10 flour tortillas
Brown the ground beef in a skillet, drain fat if any, add beans (rinse to get rid of a lot of sodium), add enchilada sauce, simmer until semi-thick consistency. Then spoon mixture into tortillas, roll over, and put in 9x13 casserole dish, smoosh together to make room for all the enchilladas. Sprinkle cheese on top (I use 1/3 C), and bake uncovered at 375 for 30 minutes. Serve with salsa and sour cream (not included in nutrition count, but if you just use salsa it doesn't add much). If you prefer soft enchiladas, you can pour another can of enchilada sauce over the top of the tortillas prior to baking. This made 9 enchiladas when I made it tonight.
