Cashew Chicken

Ingredients
1 lb chicken breast, cubed1 red bell pepper, chopped1 cup carrots, chopped1 cup celery, chopped2 cups broccoli, chopped1 medium onion, chopped2 garlic cloves, minced or finely chopped1 tsp red chilli pepper flakes (or desired qty)2 Tbsp EVOO2 Tbsp Oyster Sauce1 Tbsp Soy Sauce1 1/2 cups cashews4 Tbsp cilantro fresh, chopped for garnish
Directions
Prep all ingredients. Heat wok or large skillet with EVOO. Add pepper flakes and garlic. Cook until garlic is slightly browned but not burnt. (Do not burn garlic, watch closely as it browns quickly) Add chicken to oil mixture and cook until down or almost done. Add all veggies and stir. Cook until desired crispness. Add oyster sauce, soy sauce, and cashews for last minute or two. Garnish with fresh cilantro. Serve over rice (not included in nutritional info). Serves approx 5.
