Strawberry Spinach Salad

Dressing:2 Tbsp lemon juice1/2 tsp lemon zest2 Tbsp white wine vinegar1/3 cup sugar1 Tbsp olive oil1 tsp poppy seedsSalad:1/4 cup sliced and toasted almonds8 oz strawberries, hulled and quartered1/2 medium cucumber, sliced and cut in half1/4 small red onion, sliced into thin wedges1 pkg (6 oz) baby spinach
DRESSING:
Combine zest, lemon juice, vinegar, sugar, oil and poppy seeds. Whisk until well blended. Cover and refrigerate until ready to serve salad. Toast almonds 10 minutes in toaster oven; set aside to cool.
For the Salad:
Hull and slice strawberries into quarters. Peel cucumber, slice lengthwise to de-seed, then slice into thin wedges. Place spinach into bowl, adding strawberries, cucumber, and onion. Whisk dressing and pour over salad, gently tossing to coat. Sprinkle with almonds. Serve immediately.

This salad is sooooooooo yummy! I could eat it all day long! The only thing I changed was I added some Goat cheese to it. Just about and ounce or so. Because this salad is a sweeter salad it helped balance it out, but asiago and feta would be good too Amazing recipe thanks for sharing!! - 3/28/11
