Vegan Mushroom Sweet Sour Soup

Ingredients
1 red onion finely diced15 mushrooms Crimini mushrooms 10 diced finely, 5 quartered - reserve5 cups water2 Tbsp Jarrow Brown Rice Protein2 Tbsp Balsamic Vinegar2 Tbsp Cider Vinegar1/2 Coconut Milk1 Tbsp Garlic powder1 8 oz can Whole Water Chestnuts with juice1 tsp Sour Salt (Citric Acid)1 Tbsp Tang1 tsp 5 Spice1 Tbsp Chili powder2 tsp Vegetable Better than Bouillon--Reserved2 slices (2 sv) Tofu diced1/3 cup Dulse, Sea Vegetable1/3 cup pickled gingerremaining mushrooms from above
Directions
Spray pan with Pam. Brown onion with diced mushrooms. Add rest of ingredients and boil for about 10 minutes, at end add reserved tofu, dulse, quartered mushrooms, and pickled ginger...simmer for a few minutes more. Makes 2 servings that are 3 cups each

For more spice: either add 1 thai pepper or increase chili powder to 2 Tbsp
For more sweet: add 1 Tbsp Cinnamon and 1 tsp molassas or substitute Tang for 1/2 cup OJ
For more twang: 1 Tbsp more cider vinegar
