Lentil Cheese Bake - from More With Less Cookbook

Ingredients
1 3/4 c lentils, rinsed (1 bag)2 c water1 whole bay leaf2 tsp salt1/4 tsp pepper1/8 tsp marjoram1/8 tsp sage1/8 tsp thyme1 onion, medium, chopped2 garlic cloves, minced16 oz. crushed tomoatoes (15 oz can w/ a little water is fine)2 carrots, large, sliced 1/8" thick1/2 c celery, sliced1 c green pepper (optional, chopped)2 Tbl parsley, cried2 c cheddar cheese, shredded
Directions
Preheat oven to 375*
Combine lentils, water, spices, onion, garlic and tomatoes in shallow 9x13" baking dish.
Cover tightly and bake 30 minutes.
Uncover and stir in carrots & celery.
Bake covered 40 minutes until vegetables are tender.
Stir in green pepper and parsley. Sprinkle cheese on top.
Bake, uncovered, 5 minutes until cheese melts.
Makes 12, 190 g (approx.) servings
