Ingredients
1 box Spice Cake mik1 15oz can Pumpkin
Directions
combine cake mix and pumpkin in a lage bowl and mix well to combine. Batter will be VERY thick. Spray a 12 nd serving muffin pan with non stick spray and equally divide the batter into the 12 cups. bake at 375 for 22 minutes or until a knife inserted in the muffin comes out clean.

    I've made this before and definitely will make it again! I've also used a chocolate cake mix with the can of pumpkin and it's good too. Be sure to use a can of Pure Pumpkin and not the pumpkin pie mix. No one could even tell this was a "healthy" treat. You have to try it! - 3/20/09

    I love this recipe! I rinse out the pumpkin can with water and use it in the mix tho. I have added shredded carrots and raisins also. - 3/18/09

    Very easy and very tasty! I added a couple of dark chocolate chips to some and craisins and nuts to others. Not too many but just. a few for some crunch but not to add too many extra calories. Yum!

    Loved this easy and yummy recipe. I made the first batch with Carrot cake and a small amount of water, so it would mix better. (I just used a whisk to mix.) Next time I will use the spice mix to see if it is any better. - 3/28/18

    Super easy, great muffins! Soft and moist. I might add nuts next time to add some texture and get a bit of protein and healthy fat. I did add 1/4 cup water to the batter just to help mix it up. - 12/8/13

    I just tried this and it was so YUMMY! I didn't have canned pumpkin but I roast my pumpkins after Halloween and freeze the peeled cubed pumpkin in baggies. One thawed and drained baggie is equivalent to a can of pumpkin. So moist, so delicious.... - 4/3/09
