Chicken a la mushrooms & red pepper

- Chicken Breast, no skin, 2 unit (yield from 1 lb ready-to-cook)- cut in small pieces- Peppers, sweet, red, raw, sliced, 1 cup - Sesame Seeds, 1 tbsp- Onions, raw, 1 cup, sliced (white onion is best for this recipe)- Extra Virgin Olive Oil spray- Garlic, 1 clove - minced- Mushrooms, fresh, 2.5 cup, pieces or slices - Pacific Natural Foods Organic Low Sodium Chicken Broth, about 1/3 of a cup
Heat skillet on medium heat- spray olive oil. Add chicken (cut into small pieces about 1in by 1 in cubes). When chicken is almost completely cooked remove from skillet and set aside. Spray skillet with olive oil again, Add garlic, red pepper, and onion. Once onion becomes translucent, add mushrooms. Let cook on medium to low heat for about 10 minutes, then add chicken broth, chicken and sesame seeds. Add salt and pepper to taste. Let cook for another 10 minutes on low to medium heat. Serve warm (tastes good on whole wheat tortilla). Stays good for about 3 days.
