Apple Walnut Cherry Chicken Salad

Ingredients
2 good sized chicken breasts (cooked)1/3 c kraft light mayo (more or less as needed)1/4 to 1/2 onion 1/2 apple, cored and peeled1/3 c walnuts (optional)1/3 c dried cherries2-3 tbsp. dill weed
Directions
Cut cooked chicken into large chunks. Add to blender or food processor, along with light mayo, onion, apple and dill. Blend for about 8-10 seconds until mostly blended, but before liquified! Add a little more mayo if needed.


Add walnuts and cherries and pulse 2 or 3 times to break up slightly.


Tastes best after refrigerated over night to allow for the flavors to disperse. Makes 4 servings. Scoop using ice cream scoop onto a bed of fresh greens or mixed garden salad for a yummy way to get in your salad!
