Carol's Southwest Chicken Stew

2 cups cubed cooked chicken1.5 cups salsa1.5 cups corn (frozen or canned)1 can black or pinto beans, rinsed and drained2 cups chicken stock1/4 cup chopped onion1 Tbs taco seasoning1/2 tsp chili powder1/4 tsp cuminlime juice to taste
Spray a slow cooker container with butter-flavored cooking spray. In prepared container, combine beans, chicken, and corn. Add chicken stock and salsa. Mix well to combine. Stir in seasonings. Cover and cook on LOW for 6 to 8 hours or high 4-5 hours.. Mix well before serving. Serve with shredded cheese, sour cream, and/or tortilla chips as desired (not included in calorie calculation). Makes 4 hearty two cup servings.
