Marinated Black Beans

Ingredients
1/2 cup red wine vinegar4 Tablespoons extra virign olive oil3/4 teaspoon Morton's Lite Salt½ t ground black pepper3 cloves garlic, crushed3 (15-ounce) cans Earthfare organic black beans, rinsed and drained1 (10-ounce) package frozen cut corn, thawed1 large sweet red pepper, chopped1 medium-size green pepper, chopped1/2 purple onion, chopped
Directions
Combine first 5 ingredients; let stand 30 minutes for flavors to develop. Combine black beans and next 4 ingredients in a large bowl; add dressing, tossing to coat. Cover and chill 8 hours. Garnish, if desired. Yield: 10 to 12 servings.
