Fantastic Spicy Vegetable Pasta Sauce

Ingredients
1 head cauliflower3 tablespoons olive oil4 garlic cloves,crushed2 fresh or dried bay leaves One quarter teaspoon salt2 cups cored,peeled and seeded,vine ripenedtomatoes or one 16 oz. can Italian plum tomatoes,drained and seeded1/2 teaspoon crushed red pepper1 cup of diced onions
Directions
Sorry you will just have to look at the finished recipe and decide what is one sixth of this recipe for one serving. It's a little high in fat but remember to keep the whole dish in mind. You are putting this on top of pasta so the total fat for the meal will be reasonable.Don't be extreme!
Clean up the cauliflower and break off into about one and a half inch florets.
Heat oil over a medium heat and cook garlic and onions about four minutes. Then add the cauliflower,bay leaves and crushed red pepper. Add a little bit of salt and cook for about 5 minutes.
Add the tomatoes, cook covered for about 20 minutes. Check the cauliflower and it should still be lightly moist. If it is still kind of wet then cook for about ten minutes more with the lid off. Taste it and if it needs a little more salt add it at this time. Serve it hot on the pasta or as a good side dish.
