Ingredients
Directions
2 Cups White Sugar3 Tbsp Unsweetened Cocoa Powder1/2 Cup Smart Balance 50/50 Butter Blend, Unsalted1/2 Cup 1% Milk1 pinch salt3 Cups Quick Cooking Oats, like Quaker1/2 Cup Jif Creamy Peanut Butter1 Tsp Vanilla Extract
I used a Pampered Chef brand small cookie scoop and was able to get 52 cookies.
In a saucepan, bring sugar, cocoa, butter, milk and salt to a rapid boil over low heat. Once it reaches boiling, allow to boil for 1 minute. Remove from heat. Add oats, peanut butter and vanilla. Mix Well. Working quickly, drop by teaspoonfuls (as I mentioned, I used a small cookie scoop) onto waxed paper. Allow to cool.
