Asian Noodle Salad with Ramen

Ingredients
1 package of Ramen Noodles (oriental seasoning)1 cup Napa cabbage.25 cup red cabbage.25 cup of thinly slice carrots(or buy a premade coleslaw bag of these ingredients).25 cup dry roasted peanutsDressing1 Tbs sesame oilSplash of lime juice1 Tbs vinegarSplenda (or sugar but calories not included)
Directions
Cook Ramen Noodles without seasoning and drain.

Chop up the vegetables while the noodles are cooking.

Combine dressing ingredients and Ramen spice packet. Add water as needed and combine well (shake) to well to make dressing.

Plate with vegetables of the bottom, noodle nest in the middle and peanuts and dressing on top.

This recipie makes two servings, but it's easy to double it.

Add vegetables or protein as you see fit. Bell peppers, chicken and snap peas are my favorite adds!
