Kickin Chicken Tortilla Soup

8 cups of water3 boneless skinless chicken breasts1 10 oz can Rotel Lime Juice & Cilantro3/4 cup frozen cornParkay spray margarine2 tbsp cumin powder1 tbsp garlic powder1 tsp pepper1 tbsp dried cilantro1 tbsp salt1/2 tbsp chili powder
Put 8 cups of water in a large pot on the stove. Add all spices and bring to a boil. Add chicken and boil for 45 min. Meanwhile, fry corn in a pan with parkay spray until slightly browned on the edges. After boiling, remove chicken and shred, then add back into pot. Add in corn and rotel, and simmer.
Makes 4 2-cup servings.
Even better to crunch corn tortilla chips in bowl and add reduced fat shredded cheese (not included in calorie count).
