Crock Pot Chicken Cacciatore - Low Sodium

6lbs Boneless Skinless Chicken Thigh 2 15oz cans Hunt's Tomato Sauce, no salt added2 cups chopped Green Peppers (bell peppers)2 Medium Onions, chopped2 14.5oz cans Del Monte Diced Tomatoes, No Salt Added2 tbsp dried Parsley, dried2 tbsp Basil1 tbsp Oregano9 tsp Splenda granulated
Pour a thin layer of tomato sauce in the bottom of the crock pot, then arrange boneless, skinless chicken thighs or breasts in a single layer. Chop onion and bell pepper and layer over chicken. Mix remaining tomato sauce, diced tomatoes, 1/2 cup water, and spices in a bowl and pour in an even layer across the top, covering well.
Cook on low for 10-12 hours.
When done cooking, break up the chicken thighs into with a spatula and mix well.
Makes 18 servings, approximately 2/3 cup per serving.

I am going to make this, but what is the splenda for and can I leave it out? - 11/1/10

The splenda is there to cut the higher level of acidity in the canned tomatoes/sauce. You can leave it out If the acidity doesn't bother you, or accomplish the same thing with regular, granulated sugar.
