Easy Pancakes

Ingredients
1 c. all purpose flour1 c. whole wheat flour1/4 c. baking powder2 tsp. salt1/4 c. sugar2 large eggs, beaten2 Tbs. vegetable or canola oil2 c. skim milk1 banana, mashed
Directions
Preheat skillet over medium heat, or prepare electric griddle to 350F. Combine dry ingredients in a bowl and add wet ingredients. Mix until it is a smooth batter, and drop onto hot skillet or griddle to form pancakes. Flip cakes when batter starts forming holes in the top, then cook another minute or two. Serve with reduced sugar pancake syrup. Makes 26 pancakes.
