Salmon Patties

3 - 6oz. cans pink salmon, boneless, skinless, in water;3/4 cup finely diced onion2 egg whites1/2 cup flour1 tsp. basil1/2 Tbsp. parsley1 tsp. terragon1 tsp. cumin1 tsp. thyme1 Tbsp. extra virgin olive oil
Makes 5 generous sized patties.
Drain salmon and mix with onion, egg whites, flour, basil, parsley, terragon, cumin, and thyme. Let the mixture "rest" for about 5 minutes in the refrigerator. Form 5 patties.
Heat olive oil in a nonstick skillet over low medium heat. Add salmon patties to heated oil. Cover pan and cook slowly for about 10 - 12 minutes until pan-side of pattie is light brown. Turn the patties carefully, and continue to cook over low medium heat until light brown. Makes 5 generous sized salmon patties.
