Potato Salad ~ 1

Ingredients
2 cups red potatoes with skin, cubed3 boiled eggs (chopped)1/2 cup shredded celery1/2 cup shredded onion1 1/2 - 2 cups non-fat mayo (calculated with 1 1/2 cup)salt, pepper and paprika to taste
Directions
Cook potaoes in water until tender, rinse until cool in cold water. Add eggs, celery, onions, mayo, salt, pepper, & paprika. Mix well. Cool in the refridgerator for several hours till flavors are blended.
Makes 4 - 1 1/2 cup servings
