Quick and Easy Cheese and Salsa Quesadillas

Ingredients
2 cups of cooked shredded chicken1 1/2 cups of grated cheddar cheese1/2 cup of bottled tomato salsa8 x 20cm Wholewheat tortillas
Directions
Combine the chicken, cheese and salsa in a bowl. Lay 4 of the tortillas on a flat surface. Spread with the chicken mixture to within 1cm of the edge. Sandwich the remaining tortillas over the ones with the chicken mixture, press down lightly with a flat hand to do so. Heat a large frying pan. Using a fish slice, place 1 tortilla sandwich in the pan. Cook over a medium heat for 2 mins, then turn over and cook the other side for another 2mins. Remove from the pan. Repeat with the remaining tortilla sandwiches. To serve cut into wedges, quarters. Serve with guacamole if you like.
