1 package (340 g) extra firm tofu, cubed1 large onion1 tbsp olive or canola oil2 tbsp Braggs liquid soy2 tbsp apple juice, unsweetened1 cup zuchini cubes1 cup frozen corn10 cherry tomatoes1 tbsp. maple syrup1/4 cup ketchip1/2 cup Heinz chili sauce1/2 cup watersalt, pepper and fresh or dried thyme to taste
Saute onions and tofu together in canola oil for 3 minutes. Add Braggs and apple juice. Add all remaining ingredients and stir fry for a total of about 25 minutes.
