Mexican Chicken & Rice

4 chicken breasts, skinless, bonelessonion or onion flakes4 servings brown rice1 cup salsa1 cup shredded cheddar3 tbsp sour creamtaco seasoningwater
Cut chicken into bite-size pieces. Brown with onion. Add taco seasoning and 1/2 C. water, simmer until water is mostly gone. Add uncooked rice and 2 cups more water. Bring to a boil, then reduce heat. Simmer until rice is tender (refer to directions on package of rice for time). Add salsa, simmer until warmed. Sprinkle cheese over rice / chicken mix. Cover just long enough to let cheese melt. Serve with small amount of sour cream (optional).
