No-Bean Chili

Ingredients
1 lb. lean ground turkey2 tbs olive oil1/2 c. chopped celery1 c. chopped green pepper1 c. chopped onion1c.chopped mushrooms1/2 c chopped parsley1 package chili seasoning1 - 14.5 oz. can low sodium diced tomatoes 1 - 15 oz. can tomato sauce1 - 8 oz can tomato paste
Directions
In large stew pot, brown lean ground turkey in olive oil. Add celery, green pepper, onion, and mushrooms, cooking until onions are clear. Add tomatoes and parsley. and cook for at least 1 hour. Makes 8 - 1 cup servings
