Asian Pork & Veal Patties

Ingredients
250g pork mince250g veal mince1 small carrot, coarsely grated1/2 onion, diced 1 tbs chopped coriander (or ground)2 tbs fish sauce1 tbs peanut oil1 tsp peanut oil, extra1 tsp sesame oil1 baby cos (romaine) lettuce, leaves separated, washed, dried
Directions
1. Place pork and veal mince, carrot, onion, coriander and fish sauce in a bowl. Use your hands to mix until well combined. Divide into 10-12 portions. Use your hands to shape each into 2cm-thick, round 5cm patties.


2. Heat peanut oil in a large frying pan over medium-high heat. Add half the patties and cook for 3 minutes each side or until golden. Transfer to a plate, cover loosely with foil and set aside. Repeat with remaining patties.


3. Place lettuce leaves on serving plates. Top with patties and drizzle with peanut and sesame oil.


(This recipe can be shared between four people - just add extra lettuce, or a side salad. The calorie count seems high because it counts the peanut oil used for cooking, and also assumes the ground meats to be fatty. Substituting lean mince will bring the caloric value down.)


Optional extras - top with a squirt of lime juice or some extra fresh coriander.
