Salmon on Spinach with Lemon Champagne Sauce

2 extra-large eggs separated4 Tbs. fresh lemon juice1/3 cup dry white champagne or prosecco (italian sparkling wine)2 Tbs chopped fresh dillSalt & pepper to taste4, 5oz. salmon fillets1, 10 ounce bages fresh baby spinach2 Tbs extra virgin olive oil
In medium bowl, beat egg whites until frothy. Whisk in yolks and lemon juice. Transfer to a small pan and slowly add champagne, stirring constantly. Turn on low heat; cook, stirring constantly, until thickened. DO NOT BOIL! Remove from heat, stir in dill, salt and pepper. (This makes 1 cup) Meanwhile, coat fleshy side of fillet with black pepper, and grill or pan-fry wuntil done, turning ONCE. Remove skin. Steam spinach in a large pot until tender. Stir in oil. On each of four plates place a bed of spinach. Top with salmon, Drizzle fillet with 1/4 cup sause & Enjoy!

This sounded so awesome I recalculated the whole thing to save to my recipe box for two servings instead of four. All I added was a tsp of lemon zest to wilt the spinach instead of steaming it. The total calories comes to 351.8 per serving for a 4 oz fillet. I CAN'T wait to try this!!! - 5/24/09

I figured out what happened (because when I started out I did the same thing once). The recipe as calculated is likely for 1 filet instead of 4. It's so easy to do that. It's stil only 339 cal/svg for an incredible dish. I've got steelhead filets that I've been wanting to treat specially. Easy fix! - 2/1/09
