-About 1 pound Honeysuckle Italian Turkey Sausage (my pkg. had 20 ounces so the nutrition information is based on 20 ounce)-1 Bunch Escarole-1 teaspoon crushed red pepper flakes-1/4 cup finely minced garlic (about 15 cloves)-3 tbps. olive oil-6 cups chicken stock-2 cups water-1/2 cup parmesan cheese-2 tbsp. butter
Saute garlic, sausage and crushed red pepper flakes in olive oil until sausage is cooked. Add cut up escarole, chicken stock, and water. Simmer about 30 min. on low. Add parmesan cheese and butter just before serving.
Makes approx. 10- 1 cup servings.
