Wild rice pancakes

Wild Rice, .5 cup Carrots, raw, .333 cup, chopped Onions, raw, .333 cup, chopped Flour, white, .5 cup Milk, nonfat, .5 cup Egg, fresh, 1 large Celery, raw, .333 cup, diced
cut carrot, onion, celery and scallion into small diced peices.
Boil the water and add rice. Simmer covered for about 45 minutes or until rice is plumped and half the kernels open or follow package directions. Cool.
Cook vegetables in cooking spray until tender. Cool.
Combine the rice with the vegetables and the egg and milk. Add the flour and stir until smooth.
Cook 1/4 c portions of rice batter in cooking spray in a hot no stick fry pan until lightly browned on both sides. Be sure to reapply cooking spray when refilling the pan.
