Quinoa with beluga lentils

2 cups vegetable broth1 cup qunioa (dry)1 TBsp oil (olive)1 bell pepper, diced4 stalks celery, diced1/2 medium onion, diced2 Tbsp green chilis (canned)1 cup Black Beluga Lentils (Trader Joes ready to heat)1 tsp chili powder1/2 tsp oreganodash cinnamonsalt & pepper to taste
cook 1 cup quinoa as directed on package, using vegetable broth in place of water.
heat lentils as directed.
saute green peppers, chilis, onion, and celery in olive oil until tender. Season with chili powder, oregano, cinnamon, salt & pepper. Add lentils.
Serve lentil mixture over quinoa.
Serves 3-4
