Prawn Risotto

Ingredients
1 cup of rice1/2 cup peas1 tbsp diced onion1/4 cup red pepper, chopped1.5oz cooked prawns (shrimps)1/2 cup tinned peeled plum tomatoes
Directions
1. Place the rice in a pan of boiling water and cook as per instructions.
2. Pour the peeled plum tomatoes into a pan and simmer for 7-8 minutes.
3. Steam the peas in the microwave for a few minutes.
4. Saute the onion, red pepper, cooked prawns, lightly in a wok. Add the cooked rice and mix through.
5. Whizz the plum tomatoes with a blender to make a smooth sauce, and pour into wok and mix thoroughly, and serve.

    I used 2 cups water to cook the rice and I used 1 teaspoon of olive oil to saute the onion, pepper & shrimp (basically prawns) - 3/15/07
