Ingredients
shrimp, flaked coconut, bread crumbs, peanut oil, parsley, minced garlic (1tbsp), salt, paprika, dash cayenne, and sherry
Directions
Peel shrimp. Combine coconut, bread crumbs, oil, salt, paprika, cayenne, parsley and minced garlic. Mix well. Set aside 1/4 cup of breading. Combine shrimp with breading and coat well. Pour into lightly oiled casserole dish. Pour sherry over shrimp and sprinkle remaining topping. Bake (375F) uncovered until shrimp are tender (about 40 minutes). Serve over rice.
