Black Bean Chicken

Ingredients
1 can Black beans, drained and rinsed1 can mexicorn, drained1 jar salsa, divided1 lb chicken 1 can rotel tomatos
Directions
Spray the crockpot with Pam for easy cleanup. Put black beans, mexicorn, 1/2 jar of salsa, and rotel tomatos on the bottom of the crock pot. Top with chicken and pour the rest of the salsa on top. Cook on low all day or on high for 3-4 hours.

    Very tasty.However I changed it a bit. I only used one can of black beans, threw in about a half cup water, 1.5 tsp of cumin & squeezed in some lime juice like other people suggested. I think I will add some frozen corn next time, make it more Cuban. Cumin spiced it up; makes me drink more water. - 1/29/14

    Good, easy, healthy, flexible. Can eat as is or as salad with avocado salsa. More than enough meals out of it. Next time would use less beans and more salsa. - 2/9/10

    I loved this!!! However, I did not use rotel (too spicy for me) and did not drain the Mexicorn. We had it with brown rice one night, then barley the next. DELICIOUS!!! - 11/9/07

    This was pretty good. My Family enjoyed. I omitted the mexicorn and also cooked on top of stove instead of crock pot. Served on bed of Whole Grain Wheat Rice. - 4/14/07
