Beef, mushroom and stout stew

Ingredients
4 tbsp olive oil1kg round steak, cubed1kg large mushrooms, stems trimmed30g butter4 onions, peeled and finely chopped4 carrots, peeled and finely sliced4 sticks celery, finely chopped600 ml Guinness1l chicken or beef stock
Directions
1. Heet the oil and saute the beef until well colured.
2. In a large pan gently saute the onions, carrots and celery in butter for 10 min.
3. Pour in the Guinness and boil gently to reduce by half.
4. Add stock, the meet and the mushrooms, season with salt and pepper and simmer over gentle heat for one hour or until the meat is tender.
Serve with boiled potatoes.
