Lighter Green Bean Casserole

Ingredients
4 cups green beans(french style work well)1 can 98% fat free cream of mushroom soup1 large chopped onion1 c. sliced mushrooms2 T. french's fried onions1/2 c. skim milk1/2 packet of onion soup or dip mix1 tsp. each of black and red pepper(opt.)
Directions
Preheat oven to 350 degrees Fahrenheit. Use a cast iron skillet for a one-dish recipe. Start by sauteeing the chopped onions and mushrooms in a pan coated w/ non stick spray. Cook till desired doneness.(Transfer to baking pan if not using an ovenproof skillet)
Mix onion soup powder with the milk and pepper in a small bowl. Add green beans, mushroom soup, and milk mixture to pan, and stir until well coated. Cover with aluminum foil and bake at 350 for 30 minutes. Remove aluminum foil and top with the french fried onions. Bake for 5-10 minutes more, uncovered, or until onion topping is golden brown.
Nutritional value is for 4 large servings, but could probably make 6-8 smaller servings.

    I am going to try frozen green beans but I will cook them first. It will reduce that high sodium level. Also, I do not add the soup mix which will reduce the sodium - 11/17/10
