Vegan Chocolate Chip Cookies

"Wet" ingrediants3/4 C Brown Sugar3/4 C Sugar3/4 C canola oil1/2 C water1 tsp vanilla extract"Dry" ingrediants3 1/2 C oats (regular or quick)2 C flour (can use up to 1/2 C whole wheat)1/2 tsp baking sodaChocolate chips (amount to taste)Variations:Can decrease flour by 1/4 C and add 1/2 C ground walnuts (or other). Ground cinnamon to taste, or use raisins instead of chocolate chips.
Preheat oven to 350 degrees.
Combine wet ingredients in one bowl, dry in another. Pour wet into dry and mix thoroughly (by hand with fork is best).
Form dough into patties on ungreased cookie sheet, then push in chocolate chips. This can get a little messy (due to the crumbly nature of the dough), but is part of the fun!
Bake 8-12 minutes, let cool slightly before removing from pan. These can actually sit out at least one day without sacrificing flavor, but they don't last that long at my house.
Makes 24 good sized cookies.
