Mama's Tarragon Chicken Salad

Ingredients
2 lbs low fat chicken breast, cut into small cubes3/4 C Hellman's lite mayonaisse * do not use Miracle whip or the like1/2 C walnuts, chopped coursely3 tsp tarragon1/2 tsp pepper2 Tbs EVOO
Directions
Mix mayonaisse, pepper and 2 tsp tarragon in a small bowl. Refrigerate for minimum of 2 hours. Tarragon will infuse it's flavor into the mayo the longer it chills.

Cut chicken breasts into small cubes
Add 2 Tbls olive oil to a pan and cook chicken thoroughly. Add 1 tsp tarragon for taste.

Once chicken is cooked, transfer to refridgerator to cool. You may serve this slightly warm but do not recommend hot.

Mix all ingredients into a large bowl and serve.
