Alter Idem's Pancakes

1.5 c whole wheat flour4 Tbsp sugar1.75 Tbsp baking powder1 tsp salt1.5 c 2% milk3 Tbsp melted unsalted butter3 egg whites1 tsp vanilla extractCooking spray, butter, shortening (works best to make pancakes crispy), whatever to coat the pan (not in calculation)
Whisk or sift together the flour, sugar, baking powder and salt.
Whisk the milk, butter, eggs and vanilla, then add to the dry ingredients.
Mix just until the flour is all moistened (but barely! Don't overstir!), then stir in cheddar or blueberries (if you're adding them); let sit for 5-10 minutes if you can spare the time . . . it seems to make the pancakes a little fluffier.
If using shortening, which makes crispy edges while keeping the insides fluffy, put a smidge, about a knifetip, in the pan between each batch. Butter or cooking spray still does the job. Not as well, but we make a few sacrifices to be healthy.
Once the pan is hot from sitting on medium-high heat (6-7 on a gas stove), drop 1/4 c of batter for each cake. Flip when the bottom is browned and the bubbles on top aren’t popping quite as much, then remove once the new bottom is done.
Makes roughly 12 pancakes. Keep warm in a 250° oven while cooking if everyone wants to eat together. (And if you can avoid the temptation.)
