Bruschetta

Ingredients
4 lbs. seeded and chopped tomatoes1 small purple onion, chopped5-7 basil leaves, chopped3-4 tsp minced garlic (to taste)1/4 cup extra virgin olive oil (more or less to taste)3 tbsp. balsamic vinegar (more or less to taste)Salt and pepper to taste
Directions
Mix all ingredients well. Let sit for 1-2 hours. Taste and add more ingredients as needed. It should have a little zip from the balsamic vinegar.

Serves 10 as main dish with pasta, or more if serving it with bread as an appetizer. Enjoy!
