Ingredients
1 can of Chick Peas, drained1/2 onion, chopped1/2 cucumber, chopped1 tomato, chopped8 tbsp Red Wine Vinegar8 tbsp Balsamic Vinegar
Directions
1) In a medium bowl combine the drained Chick peas, cucumbers, tomatoes, onions, red wine vinegar, and balsamic vinegar, mix well... You might need to add some spices to get more of taste... I'm still experimenting...

    I made this yesterday but played with the ingredients and doubled the portion. I used 2 cans Eden chickpeas, 1 onion diced, 2 tomatoes seeded and diced, 1/2 English cucumber diced, 1 c raw baby peas, 1 clove garlic minced, 1/8 c. olive oil, 1/4 c. balsamic vinegar, minced fresh parsley.     I will definitely try this but I think I will cut back on the vinegars to 4 tbsps each for a start. Thanks for the idea. - 5/2/10
