Ingredients
1 cup long grain rice, preferably Basmati1/2 cup soy chunks, approx. 3.5 oz or 100 gms1/2 cup baby carrots1/2 cup baby corn1/2 cup snow peas1/2 cup spring onions1 tsp oil1/4 tsp salt1/2 tsp garam masala (available at Asian Indian stores)
Directions
1. Boil a cup of water, add soy chunks and let it soak for 10 minutes
2. In the meanwhile, wash the rice and place it in a rice cooker (takes about 15 minutes to cook)
3. Drain the water off the soy chunks; rinse in cold water; squeeze out excess water and set aside
4. Saute onions; add veges, soy chunks, salt and garam masala; stir fry for a few minutes
5. Add the cooked rice and mix well
