Grilled Cheese with Spinach

Ingredients
1 cup of uncooked spinach leaves2 tbsp Light Balsamic Vinaigrette1/4 cup of Crystal Farms Asiago and Parmesan Cheese Blend2 Slices of Wheat Bread1/2 tbsp EVOO for each slice of bread
Directions
Cook up spinach leaves in skillet. Toss leaves with the balsamic vinaigrette while they are cooking. Spread the EVOO over one side of each slice of bread as you would butter bread for grilled cheese. When the spinach is done, distribute evenly on one slice of bread. On top of this, add the 1/4 cup of cheese. Using the same skillet, grill both sides of the sandwich until golden brown. Makes one serving.
