Brussels Sprouts ala Randy

1 lb Brussels Sprouts2 slices Bacon - small dice (I used turkey bacon)1 Shallot - large, mincedOil Salt n Pepper
1. Combine minces shallots and small diced bacon in frying pan, add approx 2 Tbsp oil and cook on medium heat until it is 2/3rds of the way cooked. Do not crisp bacon or brown shallot.
2. Add salt and pepper to taste. Set aside.
3. Put a pot of water on to boil, and cut brussels sprouts in half. Discard any leaves that fall off.
4. Drop sprouts in boiling water and cook approx 4-6 minutes, until soft, but a firm bite. Not mushy.
5. Put in a shallow baking dish, cover with shallot and bacon mixture, cover with foil and bake for 10 minutes on 350 degrees.
