Mexican Chicken Salad

Ingredients
Directions
Dressing: * 1/4 c apple cider vinegar * 3T honey * 2t cumin * 1T chili powder * 1/4t salt * 1/8t cayenne pepper or hot sauce (optional) Salad: * 4 boneless skinless chicken breasts * 16oz pkg frozen corn * 1 chopped red onion * 1c grape tomatoes * 15oz can black beans, rinsed & drained * 1 red bell peppers, chopped * Greens (lettuce, spinach, whatever)
Cook chicken (I grilled it).
While chicken is cooking, mix vinegar, honey, cumin, chili powder, a pinch of salt, and some hot sauce or cayenne if desired.
Shred lettuce.
Chop all remaining ingredients except avocado and place in a bowl. Chop cooked chicken and add it to the bowl. Pour dressing over chicken. Mix and place in refrigerator for an hour or more.
Serve chicken salad over greens, garnished with avocado. Serve with salsa, chips, and/or salsa if desired (not included in nutritional info)
