Tasty Sesame Chicken Stir Fry w/ Brown Rice

Ingredients
1 pkg chicken tenderloins (approx 18 oz)2 cups water1 cup white rice1 tbsp light butter2 cups carrots, chopped1.5 cups green onions, chopped4 stalks celery, chopped1 green pepper, chopped1 spear of broccoli, chopped0.5 cup light asian sesame dressing
Directions
Bring 2 cups of water to boil, then add rice and butter. Stir once, bring to boil again, then simmer on low for 17-20 minutes (or until all the water has been absorbed). While rice is cooking, chop all vegetables. Lightly spray large pot w/ olive oil cooking spray. Add carrots, celery, & broccoli and cook for 6 minutes. Add chicken. Once chicken is brown, add remaining ingredients (including cooked rice) and stir. Cook on medium low for approximately 15 minutes, stirring occasionally.
