2 pork chops (3 oz., lean meat)2 tbsp. flourNonstick cooking spray1 large potato, peeled and thinly sliced1 clove garlic, minced1 cup chicken broth.25 cup shredded cheesesalt and pepper
Salt and pepper pork chops and coat them in flour, shaking off excess. Spray a nonstick skillet with cooking spray and brown pork chops on both sides. Add chicken broth, sliced potato, and garlic, reduce heat and cover. Simmer until potatoes are tender, adding more liquid if needed. Top with cheese and cook covered for 5 minutes, or until cheese is melted. Makes 2 servings.
