Creamy Ham Casserole

4 oz Egg Noodles (could go even lowerfat and use no yoke noodles)1 Tbs Canola Oil2 C. Chopped Ham1 Tbs. Chopped Red Pepper1/4 C. Chopped Onion1/4 C. Chopped Celery1 Can (10 3/4 oz) Cream of Mushroom Soup8 oz Reduced Fat Sour Cream1/2 C Fat Free Cheddar Cheese
Cook noodles according to package directions. Spray a fry pan with non stick spray and sautee the ham, red pepper, onion, and celery for about 5 - 10 minutes till soften. Remove from heat add cream of mushroom soup, and Sour Cream. Put into a lightly sprayed 1/2 quart casserole dish cover and cook for 25 minutes. Remove lid top with Cheddar Cheese and cook 5 more minutes till melted.

i made this yesterday and it was very good but the directions are missing some instructions as what do you do with the 1 TBSP of Canola oil, also how high do you set your oven, I don't think a 1/2quart casserole is big enough I used a 2 Quart casserole dish. Also what do you do with the egg noodles - 10/16/13
