Hungry Girl's Chicken Pot Pie!!

Ingredients
1 16oz package of Mixed Veggies8oz 99% fat free chicken breast1 10.75oz can of fat free cream of celery soup4 reduced fat crescent rolls
Directions
-preheat oven to 350
-cut chicken into cubes and then cook (til light brown) in pan sprayed with nonstick cooking spray
-cook beggies in microwave according to directions on package
-mix chicken, veggies, and soup and pour into a 9" round baking dish (casserole)
-cook in oven for ~30mins (until mixture begins to boil slightly)
-combine crescent rolls and then roll with a rolling pin until very thin (i actually just flatten each roll and stretch as much as i can bc i am without a rolling pin and it works fine!!)
-after mixture boils, place dough on top and bake for another 15-20 minutes (until golden brown)

    Love this one! Modified it to make into 6 ramekins (7") for portion control and put dough on top & bottom for DH. Added 1 tsp poultry seasoning. Need to use 8 crescents (entire tube). Cal = 355, Fat = 12 Carb = 44 Prot = 21 Sod = 1033. Add 1/2 of dough to bottom, cook 15 min, then as above. - 1/9/11

    Didn't have any "cream of" anything soup, so I substituted a cup of Campbell's V8 Garden Veggie soup (which is just as thick as the concentrated canned soups,) and it came out lovely. With bonus veggies! :-) - 9/4/10

    It was a great meal to serve all six people last night. I doubled the recipe and added some pepper. My husband thinks eating healthy is a bummer, so I was happy that this was a meal he felt we could eat again. Nice and EASY!!!! - 7/14/10
