Vegetarian White Bean Burritos

Ingredients
  • 15-oz. can of great northern beans, drained and rinsed
  • 1/2 cup salsa
  • 1 cup frozen corn
  • 1 teaspoon chili powder
  • 1 dash hot sauce (more or less to taste)
  • 6 whole wheat tortillas
  • 1/2 cup low fat cheddar cheese, shredded
  • 1 cup nonfat sour cream
Directions
1. Drain beans and place in a medium sized saucepan. Mash slightly with a fork leaving some of the beans whole.

2. Add corn, salsa, chili powder, and hot sauce. Mix well. Heat on medium until bean mixture is hot.

3. Wrap tortillas in microwave safe plastic wrap and microwave on high for 40 seconds.

4. Spoon bean mixture down center of each tortilla. Sprinkle with cheese. Top with sour cream. Roll up tortilla and serve.

    for those worried about putting plastic in the microwave, I put the tortilla between two damp paper towels. I only put in for 30 seconds - but microwave times vary. - 6/18/08

    This is very good but better with black beans. The reason americans put sour cream on mexican style foods is it's cooling contrast to the heat of the spices. Also, guacamole balances the contrasting flavors. - 12/27/10

    You can warm the tortillas in a frying pan on the stove--doesn't take very long. Ideally, you'll see a "bubble" of air within the tortillas as it warms up. Do flip it over! - 12/27/10

    For a more authentic Mexican taste, try using creme fraiche instead of the sour cream and black beans instead of white. And we always use corn tortillas in our family rather than wheat. You can buy them in Mexican stores. Otherwise, I love this. - 9/6/15

    The carb count is out of my realm. I'm diabetic and at most can only use 45 grams of carbs per meal. It sure sounds good tho. The person with the idea of eliminating the tortilla has a good idea. - 12/27/10
