Chicken Parmesan With Herbed Tomatoes

Ingredients
2 egg whites1/3 cup dried bread crumbs1/4 cup grated parmesan cheese1/4 tsp salt4 skinless, boneless chicken breast halves(about 1 lb.)2 tsp olive oil2 tomatoes, cut into 12 slices3/4 tsp sugar3/4 tsp dried oregano1/4 tsp dried marjoram
Directions
*Makes 4 servings

1. Preheat oven to 400. Spray a baking sheet with Non-stick cooking spray.

2. In a shallow dish, using a fork, beat the egg whites and 1 Tbsp of water until foamy. On a plate, combine the bread crumbs, Parmesan Cheese, and salt. Set aside 2 tbsp of the crumb mixture. Dip the chicken into the egg whites and then into the crumb mixture. Place the chicken on the baking sheet and drizzle with the olive oil. Bake for 12 minutes or until cooked through.

3. Meanwhile, arrange the tomatoes in a single layer on another baking sheet and sprinkle with sugar, oregano, and marjoram. Spoon the reserved crumb mixture on top and gently press into tomatoes. Place the tomatoes in the oven with the chicken and cook for 6-8 minutes, or until tomatoes are crisp on top and heated through.

Place Chicken and tomatoes on 4 plates and serve.
